Tortillas con huevo (migas)
Tortillas con huevo (or migas as some folks call it) is a cheap, filling, and easy to make breakfast dish.
Ingredients:
3 regular sized tortillas (I used Guerrero)
2 large eggs
1/2 medium or 1 small onion
1 tablespoon of oil (vegetable, corn, or olive)
Salt and pepper to taste
1/2 teaspoon Ancho chili powder
Handful of grated mozzarella cheese
Optional: Habanero hot sauce for topping
Preparation:
My dad used to make this for me as a kid when my mom was out of town. It’s cheap, filling, and easy to make. Here’s my version of his tortillas con huevo (or migas as some folks call it).
Heat your skillet and add your oil to it. While the pan is heating up, dice your onion and throw it in the pan to sautée for about 6-8 minutes. Next, chop up your tortillas into small squares. Toss those into the skillet. Let them get a little brown before adding your salt, pepper, and ancho chili powder. Mix in the spices and add your two eggs. Once the eggs are mostly cooked, top the scramble with mozzarella cheese. Plate and add as much hot sauce as you wish.
*It’s easy to make this non-vegetarian just add ham or chorizo. If going with chorizo, cook that first without oil.
