Fig & Honey Toast
Spicy and sweet are under-appreciated breakfast tastes.
Ingredients:
1 - 8oz. package of mascarpone cheese (room temperature)
1 lemon (juice and zest)
1/4 teaspoon of rosemary
1/4 teaspoon of thyme
Honey to taste
Two pinches of red chili flakes
Pinch of kosher salt
Two slices of either brioche or Italian bread
About 6 fresh black mission figs
Preparation:
This recipe is roughly for two slices of bread. Speaking of bread, start by toasting your slices. While the bread is crisping, combine the cheese, lemon juice and zest, herbs, a pinch of salt, and a drizzle of honey in a small bowl. Mix well. Set that mixture aside. Next, start slicing your three figs vertically so that you have five pieces from each. (Here’s how I made it.)
Evenly spread your cheese mixture on each slice, then place the fig slices on top*. As you assemble, if you need more figs, slice up one of the extras. Drizzle honey on top. And finish with chili flakes and kosher salt.
*If you want to add some protein, prosciutto and jamón serrano are good options to put on the toast.
