radish & Butter toast

Ingredients:

  • 4-5 radishes 

  • About two tablespoons of unsalted butter, room temperature

  • 2 pieces of brioche toast (of your favorite type of bread) 

  • Rosemary

  • Parsley

  • Dill

  • Pinch of kosher salt to top each slice 

Preparation:

Radish and butter toast with herbs on top on round bread slices

You can also arrange the radish in a circle if you opt to use a sliced bread roll.

First thing to do is toast your bread. Once nice and crusty, set aside to cool. You’ll be adding butter but we don’t want it to melt. Next, wash and clean the radishes. Slice them about 1/4’’ inch thick (roughly 5-6 slices per radish). Set them aside. Now it’s time to assemble the toast. 

Spread a generous amount of butter on each slice of toast--enough for the radishes to be secure. Next place the radish slices. There might be some overlap but I was able to place 4 radish slices per row, on a total of 3 rows per piece of toast. Next, sprinkle the green herbs (rosemary, parsley, dill) on top along with a generous pinch of salt. And eat up!
