Guacamole

 

Ingredients:

  • 2 ripe avocados

  • 1 small purple onion

  • 1-2 serrano chiles 

  • 1 lime (for juice) 

  • 1 tablespoon of cilantro, fresh & chopped

  • Kosher salt

Preparation:

Cut avocados in half and remove skin and pit. Place them in a molcajete* ( mortar and pestle) and add two pinches of salt. Mash them. Next, roughly chop your onion, chiles, and cilantro (I like a kick so I keep the seeds). Add those into the avocado mix and mash them in. Lastly add the juice of one lime. To get the most juice, with a bit of pressure, roll the lime on your counter a few times, or place it under running hot water for 10-15 seconds. Taste the guacamole for salt, if necessary, top it off with another pinch or two. Enjoy with chips and serve as an appetizer.
